Autumn is a time for warming comfort food and getting ready for the delicious treats of Christmas. Here we have reinvented the traditional winter bread and butter pudding by adding a few yummy ingredients.
We recently discovered Sargies chocolate sauce in the farmers market at Trevaskis Farm, and thought this would be wonderful addition to bread and butter pudding!
The perfect partner to chocolate is banana and cooked squishy banana at that. These two really do lift the traditional bread and butter pudding to the next level. This is comfort rainy day food at its best.

What you need
8 slices of stale bread
Sargies sticky chocolate sauce, or chocolate spread
1 pint whole milk
2 overripe bananas
1 tsp nutmeg
1 tbsp cocoa powder
How you do it
Preheat the oven to 180°C (gasmark 4). Butter the slices of bread on one side and then top with a generous layer of chocolate sauce. Cut the bread into triangles and layer 4 of the slices in the bottom of a rectangle oven proof dish.
Slice one of the bananas and scatter across the top of the first layer. Repeat with the second layer, and slice the second banana on top of the pudding.
Beat the egg into the milk and mix in the nutmeg and cocoa powder. Pour over the whole pudding making sure that all the bread is covered and leave to soak for as long as you can (we usually prepare in the morning and leave in the fridge all day).
Bake in the oven for about 40 minutes until golden on top and the custard has set.
Enjoy warm with clotted cream or ice cream. Although it also tastes great cold the next day if you have any leftovers!
