Christmas is a time for food and creating delicious feasts in the kitchen. We’ve come up with some easy peasy Christmas cupcakes which you can throw together in no time and offer as an alternative to mince pies with that cuppa tea.
Here’s how to make these crowd pleasing treats…
What you need
300g self raising flour
300g unsalted butter
300g caster sugar
2 tsp cinnamon
1 tsp ginger
1 tsp all spice
25ml whole milk
2-3 drops of vanilla extract
festive decorations, glitter, sprinkles etc.
How you do it
Preheat your oven to 180°C (gasmark 4).
Cream your butter and sugar together in a large bowl, then add the beaten eggs and mix well. Next add the vanilla extract and milk then stir. Sieve the flour and spices together then add to the mixture, folding it all together until evenly mixed.
Lay out your cupcake cases in the trays, this mixture should create about 30 Christmas cupcakes so you will probably have to do several rounds if you only have 1-2 trays. Place a heaped dessert spoon full of mixture into each case. Bake in the oven for 12-15 minutes until golden on top.
While they are cooking you can make up your water icing with the icing sugar and water to your desired thickness.
Once your Christmas cupcakes have cooled, then ice them and get creative! You can use edible glitter, sugar shapes and sprinkles, fondant icing or chocolates to really make them festive.
It’s a great activity to do with little ones as they can go crazy on the decorations!
